Travancore Mango Pavakka Curry From Nalapachakam / Mango Bittergourd Curry





Travancore Mango Pavaykka Curry

This recipe is inspired from Nalapachakam show of Jeevan TV. This curry is tangy, bitter and sweet too. 


Ingredients

  • 1/2 cup pavakka(bitter gourd) thinly sliced
  • 1/2 cup chopped raw mangoes
  • 1 cup thin coconut milk
  • 1 1/2 cup thick coconut milk
  • 2 slit green chillies
  • 1 dry red chilly
  • 1 tsp fresh roasted fenugreek powder
  • 1/2 tsp fresh roasted cumin powder
  • 1 tsp mustard seeds
  • 1 tsp jaggery syrup or molasses
  • 1/4 cup onions,thinly sliced
  • 1/2 tsp turmeric powder
  • 1/4 tsp chilli powder
  • curry leaves, to garnish
Directions

  Heat 1 tbs coconut oil in a pan. Add fenugreek powder, mustard seeds and red chilly. Once the mustard
splutter add onions. Saute for 2 to 3 minutes. Add bitter gourds and fry for few minutes. Add raw mangoes and fry again, add turmeric powder, chilli powder, green chillies and salt. Add  thin coconut milk  and boil well.  It will take 5 to 8 minutes. Once the gravy thickens and all the veg pieces are well cooked add thick coconut milk. Turn the heat to low and simmer it for 3 to 5 minutes. Now add jaggery syrup to adjust the tanginess and bitterness . Add roasted cumin powder on top and mix well. Garnish with curry leaves and serve with rice.
