Blueberry Muffin

Blueberry Muffins

  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
    1 tsp salt
  • 2 eggs
  • 1/4 cup canola oil
  • 1/4 cup melted butter
  • 3/4 cup milk
  • 1 cup blueberries-fresh or frozen


Combine flour, sugar, baking powder and salt, set aside. In separate bowl combine  wet ingredients. Fold wet into dry ingredients, do not over mix.  Fold in blueberries. Fill muffin tins sprayed with baking spray. Combine 1/4 cup  granulated sugar with 1/2 tsp cinnamon powder. Sprinkle evenly over muffins. Bake in 350 oven 20-25 minutes until tops are firm to the touch.
