Shrimp with Orange and white wine reduction

  • Shrimp - 6 
  • Cooking wine - 1 tbsp
  • Orange Juice - 1/4 cup
  • Salt - to taste
  • Red chili powder - 1/2 tsp
  • Green Chili - 1
  • Curry Leaves- a few 
  • Butter - 2 tsp

  Wash the shrimp thoroughly with water. Boil 1 cup of water with 1 tsp of salt . Add shrimp and boil for 3 minutes, transfer the shrimp to cold water to stop the cooking process.
In a flat vessel heat the wine and orange juice, add salt and chili powder. Heat it for few minutes so that the sauce thickens. In a small frying pan, heat the butter and add the green chili(half slit). Add the curry leave and then add the shrimp after draining the water. Cook for 1 minute at high and then switch off the heat and add the wine and orange reduction. Mix well and keep it for 5 minutes so that shrimp absorbs the sauce.

  4. hey pl put in ur crab recipe too... this one.. was just gives it a tangy taste.. first time i tried a fruit with non veg... we used to put mango only that too raw

    Many thanks for visiting my page. I had a quick look at your page, wao...its great.
    This, orange juice and curry leaves...quite an innovative combination and already approved by Mahesh!!!I am going to try this one.
    With your kind permission, I will de-vein (remove the elementary canal) the shrimp with the shell intact and also dress the head to remove the digestive system. I love to chew the shrimp head.
    Will be looking forward to more recipes
