Ingredients - 1 cup all purpose flour
1/2 cup unsweetened Dutch processed cocoa powder
1/4 tsp baking soda
1/4 tsp salt
3 tbs unsalted butter,room temperature
3 tbs margarine
2/3 cup light brown sugar
1/2 cup white granulated sugar
1tsp pure vanilla extract
1 large egg white
Directions
In the bowl of an electric mixer cream the butter and margarine
until blended. Add the sugars and vanilla extract and beat on high
speed about 1 minute. Beat in the egg white.Add the flour mixture
and beat until incorporated. Place the dough on a work surface, using
hands ,form the dough into a log shape. Carefully wrap the dough in
a parchment paper or aluminium foil and twist the ends. Refrigerate
at least 1 hour. Preheat the oven to 350 degrees F. Line the baking
sheets with parchment paper. Using a sharp knife,slice into 1/4 inch
thick wafers. Bake for 12-15 minutes or until the cookies puff and
top of the cookies have crackles(ripples).
