Ingredients
- 4 -5 drumsticks
- 1/4 cup long beans
- 1/2 cup carrots
- 1/4 cup potatoes
- 1/4 cup snake gourd
- 1/4 cup row bananas
- 3/4 cup fresh grated coconut
- 1/2 tsp turmeric powder
- curry leaves to garnish
- 1-2 green chillies
- 1 -2 shallots
- 1 garlic pod
- 1/4 tsp cumin seeds
- 1 tbs coconut oil
- 2 tbs yogurt
- salt, as required
Directions
Wash and cut the vegetables length wise, to make about 1.5 inch long pieces. Cook these vegetables with water, turmeric and salt. Do not overcook. Some vegetables take longer time to cook, so add vegetables
according to their cooking time Partially grind the coconut with shallots, green chillies, cumin seeds and garlic without adding water. Add these crushed coconut mixture to the cooked vegetables. Cook on low heat
for 1-2 minutes . Switch off the flame and add yogurt and mix well without mashing the vegetables. Pour coconut oil on top and garnish with fresh curry leaves. Serve with rice.
