- 3/4 cup all purpose flour
- 1/3 cup oat bran
- 1/3 cup flaxseed meal
- 1/ cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup carrots grated
- 1/4 cup chocolate chips
- 1/3 cup raisins
- 1/3 cup milk
- 1 egg,beaten
- 1/2 tsp vanilla extract
Directions
Preheat the oven to 350 degrees F. In a bowl mix together all the dry ingredients. To this stir in carrots and raisins. Combine milk, beaten eggs and vanilla. Pour this liquid ingredients to the dry ingredients and mix gently. Now stir in chocolate chips and combine until all the ingredients are incorporated . Do not over mix and bake for 15-20 minutes or until a toothpick inserted into the center of the muffins comes out clean.
