Eggless Apple Streusel Cake


Ingredients
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup apple sauce
  • 1/2 cup sugar
  • 1/4 cup unsalted butter
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 2 large apples,peeled and cut into thin slices
For Streusel topping
  • 1/2 cup all purpose flour
  • 1/2 tsp ground cinnamon
  • 3 tbs cold unsalted butter,cut into pieces
  • 1/4 cup brown sugar
  • 1/4 cup toasted chopped pecans
Directions

Preheat oven to 350 degrees F. Mix the flour and cinnamon. Cut in the butter
with a fork or with hands until it resembles a coarse crumbs. Stir in brown
sugar and toasted pecans. Streusel topping is ready and set aside.

In a separate bowl, sieve flour, baking powder and salt, set aside. Cream butter and
sugar until light and fluffy. Add the apple sauce and vanilla and beat until incorporated.
Add the flour mixture alternately with milk and beat until combined. Spread the batter
into the bottom of the prepared pan. Evenly arrange the apple slices on top of the cake
batter and then sprinkle with the streusel topping. Bake for about 45-50 minutes until a
tooth pick inserted into the center of the cake comes out clean. Serve warm with ice
cream or whipped cream.
