Soak rice for 2 hrs. Clean and keep it aside. Blend the rice adding little bit water and boiled rice to a thick consistency. Melt the jaggery in 1/2 cup of water, strain it and immediately(when it is warm) pour this into the rice mixture. Add a pinch of salt. The batter prepared must have a loose consistency. Heat 1 tbsp of coconut oil in a pressure cooker.Saute some chopped coconut pieces and onions till golden brown. Keep heat at high and when it is really hot, add the rice mixture into the cooker.Close cooker without the weight.Cook for 2 mins on a high flame. Next lower the flame and cook for 5 mins on a very low flame. Remove from fire and open the lid after 5 mins. Remove kalthappam from cooker when cool.
