Unnakaya - A Royal  Malabar Treat

Ingredients
  • 2 large medium ripe plantains(Nenthrapazham)
  • 1/2 cup grated coconut
  • 1/2 tsp cardamom powder
  • few chopped cashew nuts
  • 2-4 tbs sugar
  • 2 tbs ghee
  • 1 egg
Directions


Cook the plantains in microwave (or in water) and mash it. Make sure not to overcook. ( mashed bananas should be in a dough consistency).Heat ghee in a pan, add cashew nuts followed by coconut cardamom powder and sugar. Saute for 3 to 5 minutes. Then add slightly beaten egg, fry few more minutes until slightly golden brown in color. Keep the filling aside. Now make lemon sized balls out of cooked bananas, flatten with fingers and place some filling into it. Cover and make some oval shapes. Do the same with the rest of the balls and deep fry till golden brown.

  12. Nostalgia...u can boil it in water,microwave or steam them,but do not overcook,it should be in a dough consitancy.
    Anncoo...Plantains r bananas,but not the normal dessert bananas,these r found in tropical regions...

    Hey one doubt. Will the banana seperate from its layer after it is stuffed with the filling and will it drink more oil as it is not covered by a kadalamavu or maida?

    This was my favorite snack at near by Malabar restaurant in Kuwait. But the filling did not have Cashew though.:-)
    In Bong style, the Banana is so soft I have to put some flour. Will get some hard variety ripe Banana.
