Semiya Biryani / Vermicelli Biriyani


Ingredients
  • 1 cups cooked shredded chicken
  • 2 cups vermicelli
  • 1 onion
  • 1 tomato
  • few fresh spices(cloves, Cinnamon stick, star anise)
  • 2 tsp chicken masala
  • 1 tbs fresh ginger garlic paste
  • coriander leaves, to garnish
  • salt, as needed
  • 2 tbs ghee/clarified butter
  • few cashews and raisins
  • 1 tsp garam masala
  • 1/2 tsp fennel seeds
Directions
Cook the vermicelli in water adding 1 tsp ghee and salt. Drain and run
under cold water and keep aside. Heat 1 tbs oil or ghee in a pan, add
fennel seeds and fresh spices. Once nice aroma appears add ginger
garlic paste, onion, chicken masala and tomato. Fry for few minutes
in low flame .Now add shredded chicken. Adjust salt and cook for
few more minutes. Finally add vermicelli to this. Mix well till vermicelli
is well coated with all masala chicken mixture. Sprinkle garam masala.
Garnish with ghee fried cashews, raisins ,coriander leaves and caramelized
onions.
