Boodles Orange Fool
- 4 trifle sponge cakes, cubed
- 1 1/4 cup heavy cream
- 4 tbs sugar
- grated rind and juice of 2 oranges
- grated rind and juice of 1 lemon
In a glass bowl arrange trifle sponge cakes.Whip the cream with sugar until it starts to thicken, then gradually whip in fruit juices, adding the fruit rinds once most of the juices have been incorporated. Pour the cream mixture into the bowl. Cover and chill for 3to 4 hours.decorate with orange and rinds.
