Buttermilk Cranberry Chocolate Chip Scones
- 2 cups all purpose flour
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 1/2 cup unsalted cold butter(i used "i can't believe its not butter")
- 1/2 cup semisweet choco chips
- 1/4 cup dried cranberries
- 1 tsp vanilla extract
- 2/3 cup buttermilk
Preheat oven to 400 degrees F.In a large bowl combine the flour, sugar, baking powder, baking soda and salt. Cut the butter into small pieces and blend into the flour mixture with fork or pastry blender.
Add in choco chips and dried cranberries. To this add buttermilk vanilla extract mixture.Stir until just the dough comes together. Knead the dough gently into a circle that is about 6 inches round and 1 1/2 inches thick.Cut this circle into half, cut each half into 4 triangles. Place the scones on the baking sheet lined with parchment paper. Make an egg wash by beating 1 egg with 1 tbs milk and brush on the top of the scones. Sprinkle cinnamon sugar on the scones and bake for about 15 to 20 minutes or until golden brown.
