Spiced Date And walnut Cake
This is a very easy low fat high- fiber cake. Pecans can be used instead of walnuts.
- 2 3/4 cup whole wheat self rising flour
- 2 tsp pumpkin pie spice
- 1 cup chopped dates
- 1/2 cup chopped walnuts or Pecans
- 1/4 cup vegetable oil
- 1/2 cup dark brown sugar
- 1 1/4 cups skim milk
- walnut halves, to decorate
Preheat oven to 350 degrees F. Sift together the flour and pumpkin spice. Stir in the dates and walnuts. Mix the oil, sugar and milk, then stir evenly into the dry ingredients.Spoon into the prepared loaf pan and arrange the walnut halves on top. Bake the cake for about 40 to 45 minutes or until golden brown and firm.
