Nai Payasam / Nei Payasam / Sharkara Payasam In Temple Style







Nai Payasam  / Nei Payasam

This payasam is served as prasadam / Nivedyam in temples of Kerala. Nai payasam has thick consistancy than the usual payasams and prepared in lots of ghee(clarified butter), the more ghee you add, the better it tastes.


Ingredients

  • 1 cup raw rice
  • 2 1/2 cup water
  • 1/2 to 1 cup thick jaggeri syrup(substitute with molasses)
  • 1/4 to 1/2 cup ghee/ clarified butter
  • 1/2 cup grated coconut
  • 1/2 tsp cardamom powder
  • 1/4 tsp dry ginger powder
  • few raisins
  • Few dry coconut chunks(copra or thenga kothu)


Directions


  Soak rice for at least 30 minutes. Drain and roast in a pressure cooker for 2 to 3 minutes. Add water and pressure cook for  up to 3 whistles.To this add jaggeri syrup and 2 tbs ghee and cook for few more minutes. Now add cardamom powder, dry ginger powder and grated fresh coconuts. Cook by stirring constantly to avoid sticking, till the mixture leaves the sides of the pan. Remove from the stove and garnish with ghee fried raisins,cashews and dry coconut chunks. Serve as a dessert after dinner or lunch.

  32. Here I used local raw rice, if u r from Kerala u can find it in any store else use small Ponni rice
