Apple Popover / Easy Fall Dessert

Ingredients
  • 2 Granny smith apples,peeled and chopped into 1/4 inch slices
  • 2 tbs brown sugar
  • 2tbs unsalted butter
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

For the Popovers

  • 2 large eggs
  • 1/2 cup milk
  • 2 tbs butter,melted
  • 1 tsp pure vanilla extract
  • 1/2 cup all purpose flour
  • a pinch of salt
  • 1 tbs sugar

Directions

    Melt the butter in a non stick iron skillet over a medium heat. Add the sliced apples, sugar, cinnamon and
nutmeg ,saute and cook for 15 to 20 minutes until apples are soft but not mushy. Set aside to cool.
Preheat oven to 425 degree F. In a large bowl whisk eggs and milk. Add flour, melted butter, sugar, vanilla extract and salt, continue to whisk until a smooth batter forms.Pour the batter to the sauteed apples. Bake for about 20 minutes or until the popover is puffed and golden brown. Sprinkle powdered sugar on top and serve with whipped topping.
