Collard Greens Stir Fry
Here is an easy and healthy stir fry with collard greens. These are rich in vitamin c and fiber. Adding garlics and coconuts make it more tastier and healthy. The one thing i love about collard greens is, they will retain their color and texture even after cooking. Best side dish with rice and roti and can be used as stuffing.
Ingredients
- Collard greens, a bunch
- 1 small onion chopped
- 2 to 4 garlics, crushed slightly
- 2 tbs grated coconuts
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- salt, as needed
- 2 tsp olive oil
Wash the collard greens in water couple of times. Cut into thin strips. Mix well with other ingredients. Heat oil in a pan or iron skillet, add the collard greens mixture, cook covered on low flame for 10 to 15 minutes. Serve with rice, roti etc
