I make muffins almost every week and always try to make them healthier way. Here i am sharing another healthy muffin recipe with bran and bananas. . I don't like nuts in my muffins so i added chocolate chips. Add nuts of your choice .They are best eaten the day they are made.
Wheat bran banana muffins
- 1 1/4 cups all purpose flour
- 3/4 cup wheat bran
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1 egg
- 3/4 cup dark brown sugar
- 1 1/2 cups mashed ripe bananas
- 1/3 cup vegetable oil
- 1/2 tsp banana extract (optional)
Combine dry ingredients except sugar , set aside. In a separate bowl, whisk together egg, sugar, mashed
bananas, oil and banana extract. Add the dry ingredients to liquid mixture and fold until the ingredients are moistened, Do not over mix. Scoop the batter in to the muffin cups and bake for about 15 minutes or until a toothpick inserted into the center of the muffin comes out clean. Serve hot with cup of tea.
