Best ever banana bread / Moist banana bread
This quick banana bread is moist and perfect for breakfast and with evening tea. Make sure all the ingredients are at room temperature, about 70 degrees F.
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup sugar
- 3 tbs butter, at room temperature
- 3 tbs vegetable oil
- 3/4 tsp grated orange zest
- 1 large egg
- 2 mashed ripe bananas
Preheat the oven to 350 degrees F. Whisk together flour , baking powder and salt, set aside. In a large bowl beat sugar, butter, oil, orange zest and egg until creamy. Add the dry ingredients in about 3 parts, beating until smooth after each addition. Scrape the batter into the greased loaf pan. Bake about 45 to 50 minutes or until a tooth pick inserted in the center comes out clean. Cool slightly , then unmold. Serve with hot tea or coffee.
