Badusha or Balushahi 

These sweets are kind of Indian mini Donuts made of flour , butter, yogurt  and coated in sugar syrup.

Ingredients


  • 1 1/2 cup all purpose flour
  • 1/4 cup butter , dalda or ghee
  • 6 tbs yogurt
  • 1/4 tsp baking powder
  • pinch of salt
  • pinch of baking soda
  • 1 1/2 cups sugar
  • 1/4 cup water
  • 1/2 tsp lemon juice
  • oil , to fry

Directions


Sieve flour, baking powder, baking soda and salt. Add softened butter, mix with hands. Add yogurt, knead slightly to form a dough.. While the dough sits for about 20 minutes covered,  prepare the sugar syrup.
In a sauce pan bring the sugar and water to a boil till one string consistency is formed.  Add 1/2 tsp lemon juice to prevent from crystallizing.
 Make small balls out of the dough, flatten slightly and  press in the center of the dough with thumb finger . Deep fry on medium heat till golden brown on both sides. Gently put the badushas in sugar syrup for two minutes so that they are  coated completely with sugar syrup.Transfer them to the serving plate , it will dry up with in few minutes.
