Buttermilk spoon Bread / Gluten free Sugar free Corn Bread


 This is a quick  bread with cornmeal which is sugar free and gluten free. In original recipe white cornmeal is used and no sugars added. These corn breads are soft enough to eat with a spoon , served with any main dish like chicken , ham or sprinkle with grated cheese or add a dollop of sour cream.


Ingredients


  • 1 cup white cornmeal, I used yellow cornmeal
  • 1 1/2 cups boiling water
  • 1 large egg
  • 1 cup buttermilk
  • 1 tbs butter, melted
  • 1 tsp baking soda
  • 3/4 tsp salt

Directions

        Place cornmeal in a large bowl, pour over boiling water, mix well and cool slightly. Preheat oven to 350 degrees F. In a medium bowl beat egg, buttermilk, butter,soda and salt, add to the cornmeal mixture and mix well. Heat a greased 8-inch square baking dish in the oven until hot.Pour in the batter and bake until lightly puffed, about 30 to 40 minutes.
