Pears Poached in Red Wine
An elegant pretty dessert with pears and red wine.
Ingredients
- 1 bottle red wine
- 3/4 cup superfine sugar
- 3 tbs honey
- juice of half lemon
- 1 cinnamon stick
- 1 vanilla bean, split lengthwise
- 2-inch piece of orange rind
- 1 clove
- 3 to 4 firm ripe pears
Directions
Place the wine, sugar, honey, lemon juice, cinnamon stick, vanilla bean, orange rind and clove in a saucepan just large enough to hold the pears standing upright. Heat gently, stirring occasionally until the sugar is fully dissolved.
Meanwhile , peel the pears, leaving the stem intact.Take a thin slice off the base of each pear so that it will stand upright in the pan. Place the pears in the wine mixture. then simmer uncovered about 20 to 35 minutes or until the pears are just tender .Do Not Over-cook. Carefully transfer the pears to a bowl. Continue to boil the poaching liquid until reduced to half.Let cool, then strain the cooled liquid over the pears and chill for at least 2 hours.(We we couldn't wait that longer..) Serve with whipped topping, sour cream or ice cream.
