Swiss roll with strawberry mousse filling | Strawberry mousse roulade

To celebrate i made Swiss roll with my favorite mousse filling which was ready in my fridge, all i needed was to make sponge cake . The sponge cake recipe is adapted from Joyofbaking. Thanks again.

Strawberry Mousse Swiss roll \ Sponge Roll With Strawberry Mousse Filling


For the sponge cake

Ingredients
  • 2 egg whites
  • 2 eggs
  • 3 egg yolks
  • 1/3 cup cake flour, I used all purpose flour
  • 3 tbs corn starch
  • 1/2 cup sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp cream of tartar

Directions

Have all the ingredients at room temperature.Preheat oven to 450 degrees f. Butter or spray  a sheet pan (17 * 12 inch) lined with a parchment paper. butter and flour the paper again.  combine flour and corn starch, set aside. Beat the egg yolks ,eggs and sugar at high speed until thick and fluffy.( about 5 minutes in a heavy duty mixer with the whisk attachment, 7 to 10 minutes with a hand held mixer).Beat in vanilla extract. Sift half of the flour mixture over the beaten egg mixture and fold in gently with a rubber spatula. add in the remaining flour mixture. In a clean bowl with whisk attachment  beat the egg whites  adding cream of tartar until foamy.  Add 1 tbs sugar and beat until stiff  peaks form.  Gently fold a little of the egg whites into the batter, then add rest of the whites. Pour the batter into the pan and spread evenly. Bake until the top is golden brown and and springs back when lightly pressed, 6 to 8 minutes. while the cake is still hot,  run a knife along the edges to release it from the pan. Immediately invert the cake onto a clean dish towel. Remove the parchment paper,sprinkle with powdered sugar and roll up the sponge with the towel. Once the roll is cooled, unroll the sponge and spread the strawberry mousse filling. Cover and chill in the refrigerator  for few hours. Just before serving  sprinkle powdered sugar on top.
