Banana Nut Muffins

 These are healthy moist  breakfast muffins with bananas and nuts.Serve preferebly the day they are baked

  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup chopped nuts
  • 1 large egg
  • 3/4 cup packed brown sugar
  • 1 1/3 cups mashed ripe bananas
  • 1/3 cup vegetable oil
  • 1/2 tsp banana extract

       Preheat oven to 375 degrees a large bowl combine flours, baking powder, baking soda and salt. Stir in chopped nuts. In another bowl whisk together egg, sugar, bananas, oil and banana flavor. Add this to the flour mixture and fold until the dry ingredients are moistened. Do not over mix. Pour the batter into muffin cups and bake for 15 to 17 minutes or until a tooth pick inserted into the center of the muffin comes out clean.
