Bran Raisin Muffins Using Molasses

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 cups wheat bran
  • 2 tbs sugar
  • 1 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 cups buttermilk
  • 1/2 cup molasses
  • 1 egg
  • 3 tbs butter, melted
  • 1/2 cup raisins

Directions


      Preheat oven to 350 degrees F. In a large bowl whisk together flours, baking soda, sugar and salt. In another bowl beat egg, buttermilk, molasses and butter.  Add to the dry ingredients and combine with few swift strokes.  Fold in raisins. Bake for about 22 to 25 minutes or until a tooth pick inserted into the center of the muffins comes out clean.
