Vattayappam | Steamed Rice Cake

Kerala Vattayappam Recipe

Ingredients

  • 2 cups raw rice (pachari)
  • 1 cup grated coconut
  • 3/4 cup cooked parboiled rice
  • salt, a pinch
  •  1/4 to 1/2 cup sugar
  • 1/2 tsp yeast
  •  few ghee fried cashews and raisins


Directions

Soak rice in water for 2 to 4 hours. Grind rice, cooked rice, coconut and sugar adding water. The batter
should be the consistency of Idli batter. Dissolve yeast in 1 tbs lukewarm water and add to the batter. Adjust salt, let it ferment for 6 to 8 hours or overnight. Pour the batter onto a  greased  round plate or cake pan . Top it with ghee fried nuts and raisins and steam it for about 10 to 15 minutes or a tooth pick inserted into the center comes out clean.
