Whole wheat banana bread

  • 1 1/2 cups  whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 to 3 bananas, mashed
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1/8 tsp banana extract(optional)
  • 1 egg, beaten lightly
For The topping
  • 1 tbs cold butter
  • 2 to 3 tbs flour
  • 1/3 cup brown sugar

Preheat oven to 375 degrees F. Combine flour, baking powder, baking soda and salt, set aside. In another bowl beat together egg, sugars, bananas, banana extract and oil.. Add banana mixture to flour mixture, mix just until moistened.  Pour the batter into prepared loaf pan. Combine all the topping ingredients in to the food processor and pulse until the mixture resembles bread crumbs. Sprinkle the topping and few sliced almonds over the bread and bake for about 25 to 30 minutes or until a tooth pick inserted into the center of the bread comes out clean.
