Chocolate cup cakes

  • 1/4 cup cocoa powder
  • 1/2 cup boiling hot water
  • 1/4 cup unsalted butter
  • 1/2 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Preheat oven to 375 degrees F
In a small bowl mix the boiling hot water and the cocoa powder. Let cool to room temperature. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl cream the butter and sugar until light and fluffy. Add the egg and beat until smooth. Beat in the vanilla extract. Add the flour mixture and beat until incorporated. Then add the cooled cocoa mixture and stir until smooth. Evenly fill the muffin cups with the batter and bake for about 17- 20 minutes or until a toothpick inserted into a cupcake comes out clean.
