Lo Mein and Chicken with Broccoli

Lo Mein


Ingredients


  • Thick egg noodles - 2 cup
  • Soy Sauce - 2 tbsp
  • Garlic - 1 pod crushed
  • Dry sherry or white wine- 1 tbsp
  • Rice Vinegar - 1 tsp
  • Vegetable oil - 1 tbsp
  • Brown sugar - 1 tsp


Preparation

In a large pot boil about 3 cups of water and add the dry noodles and cook for about 3 minutes(see instructions on the noodles package for exact time required) to make a soft noodle. Drain the water from the noodles. In a small bowl mix together soy sauce, garlic, sherry, sugar and vinegar and keep it aside. Heat a wok to high heat and add the oil, when the oil almost smokes add the noodles and fry it. Keep moving the noodles with out breaking it for about a minute. Add the soy sauce mixture to the noodles and toss it so that the soy sauce mixture goes to the noodle evenly. Cooks for one more minute to finish.

Chicken with Broccoli

Ingredients


Chicken Breast - 1/2 cup , Boneless and skinless thinly sliced
Broccoli florets - 1 cup
Corn starch - 2 tbsp
Soy sauce - 1 tbsp
Rice Vinegar - 1 tsp
Cooking wine - 1 tbsp
Water - 1/2 cup
Garlic - 3 pods crushed
Brown sugar - 1/2 tsp
Vegetable oil


Preparation
Mix the chicken pieces with 1 tsp of soy sauce and 1 tsp of corn starch and keep it aside for 20 minutes. To prepare the sauce - Boil 1/2 cup of water and addthe remaining soy sauce, wine, 1 pod of garlic and brown sugar and mix together.Mix the remaining corn starch with 1 tbsp of water to a thick paste. Add the cornstarch mixture to the boiling water slowly and keep stirring. Stop adding cornstarch when the mixture turns to a thick sauce. Heat at low temperature for few more minutes and keep it aside.

Heat up a hot wok to high heat and add about 1 tsp of oil and turn the wok to spread it around. Add 1 crushed pod of garlic, heat for few seconds and add the chicken slices and cook the chicken pieces(Main reason for success here is to use a sizzling hot wok and not to have any water in the chicken, if you wash the chicken dry it completely with kitchen paper ) by stirring around. Keep the chicken aside.Heat the wok again and add another tsp of oil, add 1crushed garlic pod and the broccoli florets. Stir around and add 1 tbsp of water or wine and cover the broccoli and cook for 3-4 minutes until soft. Keep stirring in between and add more water if required (Note that Broccoli is not cooked in water, but in steam as the water turns to steam on the wok, so remember not to add excess water and keep the wok a high heat). Add the chicken back to the Broccoli and mix together, reduce the heat to warm and add the sauce and mix together.
