Directions Preheat oven to 325 degrees F. In a small bowl combine the graham crumbs, sugar and melted butter. Press mixture evenly over the bottom of the prepared square pan. Bake for 10 minutes and set aside to cool. Now increase the oven temperature to 350 degrees F. In the bowl of an electric mixer beat the cream cheese until smooth. Add sugar, lemon juice and vanilla extract and beat again. Add eggs , one at a time and beat until incorporated. Pour the cheesecake filling over the graham cracker base and bake for about 20 minutes. Remove from the oven and place it on a wire rack to cool.
