Ari Unda / Rice Jaggeri Balls


Ingredients
  • 1 cup par boiled rice
  • 1/2 cup powdered jaggeri(Found in Asian Markets , Indian stores OR substitute with brown sugar)
  • 1/2 cup fresh grated coconut
  • cardamom, to taste(optional)
Directions
Dry roast the par boiled rice on medium flame, adding about 1/4 th
cup at a time. Stop roasting when it turns golden brown and stops
popping. Wait for about 5 minutes to cool the popped rice and grind
to a fine powder(add the cardamom while grinding the rice to get a
nice flavor). Mix coconut and jaggeri well and grind it in a blender to
a paste. Now mix this well with powdered rice and make small balls.
Store it in an air tight container, use with in a day or two.(Shelf life
depends on the amount of coconut used, use less coconut for better shelf life)

  33. I have not used par boiled rice before and I am guessing this is a dry rice variety not literaly half boiled rice as it would be difficult to roast??Sounds simple nad easy to make.
