Brinjal Manchurian / Eggplant Manchurian
Here is one of the best recipes i tried from
Magic Oven. This Brinjal manchurian will make a great appetizer for dinner parties. Make sure to serve it hot and crispy.
Ingredients
- 4 eggplants, peeled and cut in finger shape
- 4 tbs garlics, chopped
- 2 tbs ginger, chopped
- 1 tbs chopped green chillies
- 4 tbs chopped celery
- 1 cup spring onions
- 2 tbs soya sauce
- 3 tbs tomato sauce
- 1 tsp sugar
- salt, as needed
- 1 1/2 tbs oil
For the batter
- 8 tbs cornflour
- 8 tbs all purpose flour
- salt, as needed
Directions
Make a thick batter with flour, cornflour and salt by adding little water. Coat the brinjal pieces with this
batter and fry till golden brown (You can double fry to retain the crispness). and set aside.
Heat oil in a pan. Saute ginger, garlics, green chillies and celery. Once sauteed, low the flame and add soya sauce, tomato sauce, sugar and salt. Saute for 2 minutes. Add 1/2 cup water and boil. When the gravy thickens add fried brinjal pieces. Mix everything well and fry for 5 more minutes. Garnish with spring onions.
Serve hot.
That is such an awesome idea for an appetiser..i shall def keep it in mind next time i entertain guests

ReplyDeleteThis a very new dish for me. I love brinjal in its all form..Book marking it. I like that good use of garlic and ginger with Soya..
I liked your comment at my blog. Actually you can use any oil in place of mustard oil. But if the recipe specifies, to put a bit of raw mustard oil during the process, then only you need to use it.That too to get the flavour of the dish being enhance with the distinct taste of raw mustard oil.
