Curried prawns In Coconut Milk With Thai coconut Rice
Ingredients
- 2 1/2 cups coconut milk
- 2 tbs yellow curry paste
- 1 tbs fish sauce
- salt,as needed
- 1 tsp sugar
- 1 cup prawns
- 1/2 cup cherry tomatoes
- 1/4 cup fresh lemon juice
- coriander leaves, to garnish
Directions
Put half of the coconut milk into a wok and bring to a boil. To this add yellow curry paste, stir until it disperses, then simmer for about 10 minutes. Add the fish sauce, sugar, salt and remaining coconut milk Simmer for another 5 minutes. Now add the cherry tomatoes and prawns Simmer for about 5 minutes until the prawns are pink and tender. Garnish with chilli flakes and corinader leaves. Sprinkle fresh lemon juice and serve with Coconut rice or plain
Jasmine rice.
How to make Thai Coconut Rice
Ingredients
- 2 cups Jasmine rice
- 1 cup water
- 2 cups coconut milk
- 1/2 tsp salt
- 2 tbs sugar
- coconut chunks, to garnish
Directions
Wash the rice several times in cold water.Place the water, coconut milk , salt and sugar in a heavy bottomed sauce pan. Add the rice, cover and bring to boil. reduce the heat to low and simmer for about 15 to 20 minutes.Fluff up the rice with fork or chop sticks before serving.

Sitting in Hong Kong and away from kitchen, I was counting how many recipes of your I have book marked for cooking...and lost count ha ha. One life time is too short to cook all the recipes I have book marked!!!
