Neyyappam/ Kerala Style unniyappam Recipe

Neyyappam, Unniyappam or Kara appam is made mainly of rice flour and  melted jaggery. It requires special uniyappam maker similar to Pancake Puffs maker.Unniyappams are given as prasadam in temples and essential ingredient among Vishu Kani.Keralites can't imagine Vishu without Kani konna  and Unniyappam.

Ingredients

  • 2 cups rice flour
  • 1 1/4 cup melted jaggery
  • 2 small  mashed bananas, preferably Mysore pazham(Palayam kodan)
  • 1 tbs black sesame seeds
  • 1/4 cup ghee fried  dry coconut chunks( thenga kothu)
  • 1 tbs ghee (clarified butter)


Directions
 To the rice flour add  mashed bananas, sesame seeds and  pinch of salt, set aside. Melt the jaggery with little
bit of water( use dark colored jaggery). Add this to the rice flour mixture.. Make a medium pouring consistency batter by adding little bit of water, if needed.  Use hand mixer, if needed. Add coconut chunks and 1 tbs of ghee to the batter and keep it for about 2 to 4 hours. Fill the unniyappam maker with coconut oil ,when it is hot pour 1 tbs of batter in each pot, deep fry till brown, turning both sides.
