Zucchini Carrot Bread | Sweet Zucchini Quick Bread


Qucik Zucchini Carrot Bread

I love making Quick breads, they are easy to make no knead breads. Usually they are leavened with baking powder and / or baking soda. These are great with a cup of tea or coffee or have it for breakfast.

  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup grated carrots
  • 1 cup grated zucchini, squeezed of excess moisture


Combine flour,bakingsoda, baking powder, cinnamon and salt, set aside.In a large bowl blend eggs, sugar,
oil, vanilla extract and salt. Stir in dry ingredients and mix well with wooden spatula.To this add carrots and zucchini. Pour the batter into the greased loaf pan. Bake until the bread pulls away from the sides of the pan, about 45 minutes.Cool in the pan on a rack for 10 minutes, cut into slices and serve hot with tea.
