Mini Chocolate chip Loaf

Ingredients
  • 1 1/4 cup cake flour sifted
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips
Directions

Preheat oven to 350 degrees F . In a large bowl sift together flour,salt and baking powder. In the bowl
of your electric mixer, or with a hand mixer, beat the butter until creamy and smooth. Gradually add the sugar, beat on medium-high speed until light and fluffy.  Then add the eggs, one at a time, mixing well after each addition. Add vanilla .Add the flour mixture and mix just until incorporated. Stir in chocolate chips, mix well. Pour the batter into the prepared mini loaf pans and smooth the top.Bake for about 40 to 50 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.

  2. You can call it my luck or bad luck. I see a lot of cake today in several blogs. The good luck is that I could witness such delicious cake. The bad luck is I could never taste them through the inet :(

  6. oh love the addition of chocolate chips, Vrinda! FOr instance i thought it was sultanas, and pleasantly suprised that it has chocolates! LOve the moist looking cake.
