Carrot Cup Cake


  • Ingredients
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 tsp vanilla extract
  • 1/8 cup buttermilk
  • 3/4 cup all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 3/4 cup grated carrots
  • 1/4 cup raisins
Directions

Preheat oven to 350 degree F.Beat sugar,egg,oil,vanilla and buttermilk together.In a large bowl sift together flour,cinnamon,baking powder,baking soda and salt.Add half of the flour mixture to the sugar mixture,mix until combined.Add carrots and raisins to remaining flour mixture and add to the batter until well combined.Bake 10 -12 minutes until a toothpick inserted in the center of the cup cakes comes out clean.It tasted better without frosting.
