- 3 to 5 eggplants,chopped
- 1 tbs olive oil
- 1/2 tsp pepper powder
- 2 to 4 garlics, grated
- 1/4 cup onions,chopped
- 1/4 cup tomatoes,chopped
- salt , as needed
- Grated Parmesan cheese, to garnish
Marinate eggplants with oil, garlics, salt and pepper, keep aside.Heat 2 tsp olive oil and 2 tsp
butter in an iron skillet. To this add eggplant mixture and roast on both sides till golden on
low flame. Now add chopped tomatoes and onions, cook covered for few more minutes.
Once cooked garnish with grated Parmesan cheese (any kind) and serve as a side dish.
