Carrot Pachadi


Ingredients
  • 2 cups grated carrots
  • 1 cup yogurt
  • 1 red dry chilli
  • 1/4 tsp turmeric powder
  • salt, as neeeded
  • 1 tsp mustard seeds
  • curry leaves ,few
  • 1 tbs grated coconuts
To Grind
  • 1/2 to 3/4 cup grated fresh coconuts
  • 2 green chillies
  • 1/2 tsp mustards seeds
Directions


        Heat 2 tsp oil in a pan. Saute carrots with turmeric powder and salt till raw smell goes. Transfer the carrots to a serving dish. To this add ground coconut paste and beaten yogurt. Tamper with mustard seeds, curry leaves, red chilli and coconuts. Serve as a side dish with rice.

Never tried carrot pachaadi..looks tempting..hey vrinda, do you know how to make pineapple curry or pachadi..I know south Indian people makes really good, I've got tons of pineapple here...
