Irish Soda Bread | Instant Tutti Frutty Bread






Irish Soda Bread  with Tutti Frutty and Raisins

This is a quick bread recipe which doesn't require yeast or much kneading. I used tutti frutti instead of currants ,so turned out bit sweet for me. In original recipe Ina used currants, so i recommend to use currants for the traditional taste.

Ingredients

  • 4 cups all purpose flour, plus extra for currants(i used tutti frutti and raisins)
  • 4 tbs sugar
  • 1 tsp baking soda
  • 1 1/2 tsp salt
  • 4 tbs unsalted cold butter
  • 1 3/4 cup cold buttermilk
  • 1 egg, lightly beaten
  • 1 tsp grated orange zest
  • 1 cup dried currants( tutti futti)

Directions


      Preheat oven to 375 degrees F. Line a sheet pan with parchment paper. Combine flour, sugar, baking
soda and salt in the bowl of an electric mixer. .Add butter (cut into small pieces) and mix on low speed  until butter is mixed well with flour.In another bowl lightly beat buttermilk,egg and orange zest and add this to the flour mixture,with mixer on low speed . Combine tutti frutti with 1 tbs of flour and mix into the dough.Dump the dough onto a well-floured board and knead few times into a round loaf.Place the loaf into the sheet pan and lightly cut an X on the top of the bread with a serrated knife.Bake for 45 to 50 minutes or until a cake tester comes out clean. Enjoy with a cup of hot tea r coffee.
