Akkras / Black-Eyed Beans Fritters




These fritters are from Africa, usually made from black eyed beans. This recipe is adapted from the cook book "Around The World In 450 Recipes". These are quick and easy to prepare, great with hot tea.



Ingredients
  • 1 1/4 cups dried black eyed beans
  • 1 onion , chopped
  • 1 red chilli, halved
  • 1/3 cup water
  • oil, for deep frying

Directions


Soak the Black-eyed beans in plenty of water for 6 to 8 hours or overnight.Drain the beans, rub the beans
between the palms of your hands to remove the skins.Return the beans to the bowl, top up with water and the skins will float to the surface. Dis card the skins and soak the beans again for 2 hours.Place the beans in a blender or food processor with the onion, chilli and a little water.  Blend to make a thick paste. Pour the mixture into a large bowl and whisk for few minutes.Heat the oil in a large heavy saucepan and fry spoonfuls of the mixture for 4 minutes until golden brown. Serve hot .
