Chocolate Crinkles | Chocolate Fudge Cookies


Chocolate crinkles/ chocolate fudge cookies

Ingredients

  • 1/4 cup (4 tbs) unsalted butter
  • 8 ounces semisweet chocolate chips
  • 1/2 cup sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • confectioners /powdered sugar, as needed
Directions

Place the chocolate and butter in a small saucepan of simmering water, stirring occasionally until the
chocolate has melted and mixture is smooth.,cool completely. Sift together flour, baking powder and salt into a medium bowl, set aside.Beat eggs and sugar until thick and fluffy. Beat in vanilla extract. Add the cooled chocolate mixture and beat until incorporated. On low speed add the flour mixture and mix until just incorporated. Cover with plastic wrap and refrigerate until firm enough to shape into balls. Preheat oven to 325 degrees F and place rack in the center of the oven. Place the powdered sugar in a shallow bowl. Roll the dough into 1 inch balls, drop them into the sugar  and roll them until completely coated. Bake cookies for about 8 to 10 minutes or just until the edges are slightly firm but the centers are still soft.Transfer the cookies to a wire rack and cool completely.
