Cashew Nut Curry


Ingredients
  • 1 onion chopped
  • 1 small tomato,chopped
  • 2 green chillies
  • 1/2 cup cashewnuts 
  • 1/2 cup coconuts, grated
  • 1 whole red chilli
  •  1 tsp mustard seeds
  • curry leaves 
  • 1/2 tsp fennel seeds(perum jeerakam)
  • 1/2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
Directions
Dry roast the coconuts. When it turns light brown in color add fennel seeds,
coriander powder and chilli powder. Turn off the heat when it turns completely
brown ,cool it and grind to a coarse paste , Set aside. Heat oil in a pan, splutter
mustard seeds, red chillies and curry leaves. Add onions, once sauteed add chopped
tomatoes, turmeric powder and green chillies. Now add cashew nuts water and
salt, cook covered for few minuts, till nuts are completely cooked. Then add ground
coconut paste, adjust the salt and cook for 2 more mintes. Garnish with curry leaves.

  11. Hey, I love this kurma from my chidlhood. Only difference is tender green cashews were used. My neighbour aunty used to prepare this for me. Looks slurpy!
