Sweet Pineapple Pachadi With Raisins And Ripe Plantains / Pineapple Munthiri Madhura Pachadi




Sweet  Pineapple Pachadi 


Ingredients
  • 1 cup pineapples, chopped
  • 1/4 cup ripe plantains (nenthrappazham), chopped
  • 1 tbs raisins
  • 1 tsp turmeric powder
  • 1/2 cup beaten yogurt
  • 1 to 2 tsp sugar or as needed
  • salt, to taste
  • 2 tsp coconut oil
To grind
  • 1/2 cup grated coconut
  • 1/4 tsp mustard seeds
for seasoning
  • curry leaves
  • 2 tsp grated coconut
  • 1 dry red chilli
  • 1 tsp mustard seeds
Directions
Cook pineapples adding salt and turmeric powder. Once half cooked add plantains and raisins, cook for few more minutes till the fruits becomes soft and water dries up. To this add ground coconut paste and sugar. Mix everything well and adjust the salt and sugar level, take off the flame.To this add beaten yogurt. Heat oil in a small pan and splutter mustard seeds. To the same oil add red chillies, coconuts and curry leaves, Saute till golden brown and add this seasoning to the pineapple pachadi. Serve with rice as a side dish.
