- 2 Medium onions - thinly sliced
- 1 tbsp tomato paste
- 1/2 tsp Cumin powder
- 1 tsp chilli powder
- 1/2 tsp Coiander powder
- 2 tsp Ginger garlic paste
- 1/2 tsp black pepper powder
- 1 tsp vinegar
- a pinch of fenugreek powder
- 4 piece chicken thighs cut into medium pieces.
- 2 tbsp vegetable oil
- Coriander/Mint leaves to garnish
Diections
Heat oil in a pan and fry the onions till they turn brown color. Remove the onion
from the oil and keep it in a kitchen towel to remove excess oil. Heat the pan with
a little bit of oil and slightly roast the cumin powder, chilli powder, coriander powder
ginger garlic paste, the pepper powder and fenugreek powder. Blend the spice mixture
with little bit of water to a smooth paste and apply to the chicken and keep it for 20 minutes. Blend the onion with vinegar to a smooth paste and keep it aside. Heat a thick bottomed vessel and add the marinated chicken and start cooking it covered at medium heat. Add the tomato paste and onion paste after about 10 minutes and cook until chicken is fully cooked and the gravy is thick. Garnish with Mint leaves.

Chicken vindaloo looks so spicy and delicious! I love this dish and used to order it every time I went to an Indian restuarant here. Never tried making it though. You have tempted me enough to give this a try :D

I had wondered what Chicken Vindaloo was ever since hearing it on a English Comedy "Red Dwarf". The only meal left onboard the Starship was Chicken Vindaloo and the only human alive seemed to enjoy it. Now I know. Though, I had assumed it was EXCEPTIONALLY curried-up. Thanks
