 Pecan Pie From Scratch

Yesterday March 14 th was National Pi day. As usual my hubby made an awesome pie for National pi day celebration at office. Last year he made Pumpkin pie from scratch and this year it is Pecan pie, the BEST ever...
Ingredients

 For the crust
  • All purpose flour - 1 1/4 Cup
  • Cold Butter - 1 stick(1/4 lb)
  • Cold water - 2 tbsp
  • Sugar - 1 tbsp
  • salt - a small pinch. 

For the filling

  • 2 large eggs
  • 1/2 cup packed brown sugar
  • 1/4 cup + 1 tbs corn syrup
  • 2 1/2 tbs unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cups pecans
Directions


Prepare the crust

Cut the butter into small pieces and mix with the all purpose flour. Add the sugar and salt and give few spin in a food processor until it is well mixed together. Transfer to bowl and add the cold water little by little and same time continue mixing by hand or a spoon to form a dough (add enough water to just hold together the dough). Using a roller roll out the dough flat and transfer to the pie pan.Cut of the sides and keep this refrigerated.

Prepare the filling and build the pie

In a large bowl whisk all the filling ingredients except pecans until blended. Stir in pecans. Pour the filling into the pie crust. Bake in a 375 preheated oven until the edges are firm  and the center seems set, about 35 to 45 minutes. Let cool on a rack for at least 1 1/2 hours. Serve warm or at room temperature.
